ABOUT OUR BREAD

What makes Simply Sourdough & Co'S Sourdough so special?

 We craft our bread with a proprietary blend of all Organic Whole Grain Stone Ground Flours, Water, Celtic Sea Salt, and our live Sourdough starter.  This artisanal process — combined with a long, slow fermentation — creates complex flavors, a wonderfully
textured crumb, and benefits that go beyond taste.

What is long fermentation, and why does it matter?

Our dough undergoes a slow, extended fermentation, where wild yeasts and beneficial lactic acid bacteria naturally develop the dough over many hours.  This traditional fermentation method is a hallmark of true Sourdough baking — one that enhances flavor and may contribute to more gradual digestion and a gentler effect on blood sugar levels
compared with other breads.

Why do you use an all organic whole grain stone-ground flour blend?

Organic Whole Grains retain more of the grain’s natural nutrients, protein and fiber.  Stone Ground milling preserves the wholesome character of the flour and supports a richer flavor profile in every loaf.  This attention to ingredient quality is central to the nourishment
and taste we strive to deliver.


Health & Digestion 

is sourdough good for gut health?

Yes — the natural fermentation in Sourdough produces prebiotic compounds that help support beneficial gut bacteria, aiding digestion and overall gut wellness.  The combination of Whole Grains and fermentation creates a bread that many customers tell us feels easier to digest compared with other breads.


What about blood sugar control?

Because Sourdough fermentation alters carbohydrate structure and lowers the bread’s glycemic impact, it may help support more steady blood glucose levels compared to many non-fermented breads.  This characteristic is one reason some of our regular customers — including individuals working with Dietitians or their Doctors — have chosen our Sourdough as part of their health-focused meal plan.

 

Do Doctors or Dietitians ever recommend your bread?

Yes. We have several customers that are Doctors and several of our customers have shared that their integrative medicine healthcare providers have specifically pointed them to choose  our  Simply Sourdough for its slow fermentation and Whole Grain nutrients — especially when managing blood sugar or digestive concerns.  While we don’t make medical claims, we’re proud that real people including Doctors in our community see our bread as
a positive choice in their wellness routines.

How can I place an order?

In the summer you can find us at the Richfield WI Farmers Market most Saturdays 10am – 1pm located in the beautiful Richfield Historical and Nature Park at 1894 WI-164, Richfield, WI 53076.  Off season we offer online pre-order sales and pickup at seasonal events in collaboration with some of our favorite local businesses and friends — details are posted regularly on our Facebook page and Website. You can also contact us through our email SimplySourdoughAndCo@gmail.com for large order custom bakes for your Events or Corporate Gifting.

What’s the best way to store and serve your sourdough?

Every loaf comes with its own care instructions sheet.

Do you have a retail location?

Simply Sourdough & Co operates as a Wisconsin Cottage Baker, meaning we bake and sell non-hazardous shelf stable baked goods made in our home micro-bakery
not subject to state licensing
or inspection.

Is your sourdough gluten-free?

No. Our Sourdough contains Whole Grain Wheat and other flours, so it is not suitable for those with Celiac disease.  Some people with gluten sensitivities may find our long-fermented Sourdough easy to digest, but individual tolerances vary.  We have been very pleased to hear from many people who have Gluten sensitivities that they have been able to enjoy our Sourdough without ill effects, but we would never recommend it to a person who has a medical diagnosis restricting Wheat or Gluten. 

Can I buy your sourdough starter?

Selling starter is not legal by private individuals in the state of Wisconsin, but we happily give it away for free to anyone who wants it.  We believe in self-sustainability and that more people should know how to grow and make their own food.  If you need help maintaining a starter or getting started with your first loaf, just ask — we love to share tips!

Are your products allergen-free?

Because we bake all products in the same kitchen and on shared equipment, we cannot guarantee that any product is free from all allergens.
